dc.description.abstractAt present, the triticale Ingen 93, Ingen 33, Ingen 35 and Ingen 40, obtained at the IGFPP of the ASM, are approved in the Republic of Moldova. These varieties are productive and resistant to frost, drought and disease. It is characterized by a rich protein and gluten content with high technological bakery properties. From the flour mix 50:50 triticale and wheat, we obtain quality bread with a well-balanced content of essential amino acids, and from Ingen 40 flour, we obtain bread with a high volume, content, porosity and taste without wheat flour. This variety is approved for bakery and can successfully replace rye flour. It can also be sown in spring, when winters are harsh and common wheat is dying.en
